This very local business was established in 1964 by Geoffrey Harris & his wife Josephine. Josephine's father Richard Pinney had established a smoking business at Orford, Suffolk after the second world war. Pinney's of Orford is still trading today.
Having seen the potential in smoked salmon Geoffrey, Josephine and their three sons spent a holiday in Orford learning how Richard Pinney's traditional smoking ovens operated and how to smoke salmon. Having learned all they could, the family returned home to Edburton to build their own kilns which are still in use today. The kilns are used to cure both wild and farmed salmon - no artificial colours or preservatives are used.
With Geoffrey & Josephine Harris retired but still living in Poynings and elder son Richard emigrated to Australia to set up Springs Smoked Salmon there, the Edburton business is now owned and managed by the two younger sons David and Martin.
We, of course, buy our smoked salmon from Springs together with many other fish and meat products, both smoked and fresh - even local game when in season.
You too can visit the wonderful retail shop just a short drive beyond Poynings, through the tiny neighbouring village of Fulking, to Edburton. Look out for the shop on the left and the car park immediately opposite.

Alan first started making sausages in his family's butcher shop before and after school in the 40's and 50's. In the 60's and 70's mass production of very debased, cheap sausages for supermarkets made him realise that there was a need for a high quality product made from real meat. Alan's business grew, achieving several accolades over the years. His 'Sussex Village' sausage has twice earned him the 'Sausage Makers Champion of Champions' accolade !
At the last count Alan's range of hand-made high quality, healthy sausages listed over thirty different recipes, including some non-meat varieties.
Alan supplies all of our sausages - we vary the recipe we use so do ask us on the day of your visit.

You can see Poynings Grange Farm looking north from our car park! The Crowther family have spent many years establishing their hand-reared, grass-fed Stonestaples herd of pedigree Sussex beef cattle.
There isn't enough to supply all of our beef requirements but we have an ongoing arrangement to purchase as much as the farm is able to supply and you will often be lucky enough to see Poynings Grange Farm beef featured on our chalkboard specials menu. Watch out also for Poynings Grange lamb. Or occasionally even pork from their woodland reared Middle White pigs.
Freezer packs are often available to domestic purchasers - contact the farm direct for details.

The Cheese Man was established in 1995 by Fred Cowling, having vast knowledge of English and Continental cheeses with over 30 years experience in the cheese industry.
The company quickly grew to become a respected wholesaler of fine cheeses in the Sussex area and in 1998 Fred was joined by his son Tony who has wide experience in the catering industry>
We buy all of our cheeses from the Cheese Man. We always offer a range of Sussex cheeses as well as some English cheeses from further afield for you to enjoy as part of your Ploughman's, or to finish off your meal with a selection of superb hand-made premium biscuits, also from the Cheese Man.
The Cheese Man does not have a retail outlet but you will find some fantastic Sussex cheeses at local deli's - or even, we have noticed, at some of the better supermarkets.
